Potato Soup 2

Ingredients

4 cups potatoes, peeled and cubed

1 cup celery, sliced

1 cup onion, chopped

2 cups water

2 tsp salt

1 cup milk

1 cup heavy cream (or use half&half, in place of the two)

3 Tbs butter, melted

1 Tbs parsley flakes

1/8 tsp pepper

Directions

Combine potatoes, onion, celery, water, and salt in large pot, simmer 20 minutes covered until potatoes are tender. Mash about 1/2 mixture, leaving remainder whole.

Stir in remaining ingredients and stir until heated.

Can be doubled.
